Lamb Meatballs

Ingredients:

450 gm Freshly ground lamb

240 gm Kalamata olives

1 Egg yolk

60 gm Bread crumbs

60 ml Milk

5 gm Freshly ground black pepper

5 gm Sea salt

1 clove Garlic

5 gm Fresh oregano-chopped


Instructions:

Preheat the oven to 400 degrees F

Remove the pits from the Kalamata olives (if any) and roughly chop the olives and set aside.

In a bowl, mix together the milk, bread crumbs, egg yolk, salt, pepper, garlic and oregano.

Add the ground lamb and the chopped Kalamata olives and mix together until just combined.

Using your hands, shape the meatballs into golf ball size and place on a baking sheet

Bake for approximately 16-18 minutes or until golden and cooked through.

Served warm with naan bread and Izatziki sauce or your favorite pasta.
