Penne with Sausage Puttanesca sauce

Ingredients:

1 lb Penne

5 links Italian sausage, casings removed and sliced

1 tablespoon extra virgin olive oil

1/2 cup onion, chopped

3 gloves garlic, minced

1 can diced tomatoes

1/4 cup tomato paste

1/2 cup red wine

10-12 pieces kalamata olives, pitted and diced

2 tbsp capers

1/2 tbsp of oregano

1/2 tsp of dry chili flakes

1/2 cup of fresh parsley finely chopped

Salt and fresh ground pepper to taste

Instructions:

Heat 1 tablespoon oil in a skillet, add the sausage and saute until the meat is cooked through and no longer pink. Remove sausage from skillet.

In the same skillet, add the onion and garlic to saute until onions start to turn translucent. Then add olives, capers, chili flakes and oregano and continue to saute for another 1-2 mins.

Add diced tomato and tomatoes paste and stir well, then add the cooked sausage.

Simmer on low heat for another 10-15 minutes.

Cook penne pasta as per package directions; drain water.

Pour penne over the sauce and toss; coating all of the pasta and serve with fresh parsley.​
